Arrival day and check-in at Hotel. Welcome drinks and Greek “mezes”. About evening time, we are going to have our first meeting with a little talk about the program.

The Morning is free for you to relax or explore the local area. After lunch time around 16.30 – 17.00 we’ll meet at Margarita’s restaurant for an afternoon tea or coffee. Today we are going to work with grape leaves: picking leaves from our grapes and blanching them, making the stuffing, and rolling dolmadakia, preparing also eggplants imam and stuffed tomatoes and vegetables in the oven. Always, the cooking lesson turns into a local fiesta at the end, where the participants will taste the dishes they have prepared, along with home-made wine, local bread and Greek music.

After breakfast we will go to the mountains of Paros. Depending of the season, we are going to pick up sage, oregano, capers or if you are lucky, a very special green of Paros “kalfa”. If you collect more herbs than needed, feel free to take them home! Coming back to Margarita’s restaurant, we are learning today how to dry and keep them and in which way Greeks give flavour to their food with them. Today we are going to work with meat: preparing roasted pork with a rosemary sauce and meatballs with mint. Dinner will be served usually at 9 pm.

After breakfast we will visit the award-winning Winery-Museum Moraitis in Naoussa village, www.paroswines.gr, where the family is happy to explain their personal history, the history of the winery, and the cultural aspects of the area. You can, of course, also purchase their award-winning wine and wine tasting is available as well.
In the afternoon we will begin our cooking lesson about fish, preparing ‘kakavia’, a special fish soup, charcoal-grilled fish, octopus with pasta and freshly salads. Before our dinner we are going to light our wooden oven and prepare the chick peas for an all night cooking.

After breakfast we are going to have our final cooking lesson. Prepare lamp with potatoes in the wooden oven and learning how we are doing tzatziki, eggplant salad and our zucchini and tomatoes balls.
Afternoon is free for napping or exploring the island or just sunbathing next of our pool or preparing for our last night farewell party.

Today will be the departure day for our guests who are going home. For the ones who haven’t had enough of Paros, feel free to stay with us for some days more!
